Weeknight Grilled Chicken Greek Salad

I have been reunited with feta cheese and it feels so good. After spending so many months dairy-free, feta was truly one of the things I looked most forward to being able to have again – and it’s one of the best parts of this super simple grilled chicken Greek salad!

This salad is a frequent go-to for me in the summer months. It’s easy to put together, and I love making a bigger version for dinner so there are enough leftovers for lunch the next day. The combination of seasonings makes it perfectly tangy which balances the feta really well – I usually use dried spices, but if you have fresh available that would work even better!

Grilled Chicken Greek Salad

Ingredients
  

  • 1 head lettuce
  • 2 Roma tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 1/2 cup feta cheese
  • 1/2 lb grilled chicken can use any protein
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1 tbsp oregano
  • 1/4 tsp crushed red pepper optional for a little kick

Instructions
 

  • Grill your chicken however you like and let it cool to room temperature
  • Chop all the veggies and combine in a large bowl
  • Add feta cheese
  • Dress with olive oil and lemon juice
  • Season with salt, oregano, thyme, and (optional) crushed red pepper
  • Toss until all the veggies and feta are evenly coated with dressing and seasoning
  • Top with grilled chicken or protein of choice
  • Serve right away, or refrigerate to serve chilled later
