Grilled Chicken Greek Salad

Ingredients
  

  • 1 head lettuce
  • 2 Roma tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 1/2 cup feta cheese
  • 1/2 lb grilled chicken can use any protein
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1 tbsp oregano
  • 1/4 tsp crushed red pepper optional for a little kick

Method
 

  1. Grill your chicken however you like and let it cool to room temperature
  2. Chop all the veggies and combine in a large bowl
  3. Add feta cheese
  4. Dress with olive oil and lemon juice
  5. Season with salt, oregano, thyme, and (optional) crushed red pepper
  6. Toss until all the veggies and feta are evenly coated with dressing and seasoning
  7. Top with grilled chicken or protein of choice
  8. Serve right away, or refrigerate to serve chilled later
