Weekend Charcuterie with New England Country Mart & Chicken Cordon Bleu Casserole

It’s been a cold and rainy week here in New England, and I’m ready to celebrate Friday night at home with all the comfort foods. We love a charcuterie board as a pre-dinner snack and a fun way to serve sides with dinner, and our boys have grown to love their “kids’ charcuterie” boards, too! I’m so excited to share the beautiful charcuterie boards we put together for tonight with some delicious goodies from our friends at New England Country Mart. NECM has beautiful, high-quality, and locally sourced products from fresh produce to prepared meals to fresh flowers! Ordering through their website couldn’t be easier, and they offer contactless delivery in the Boston metro area. One of the things I love most about NECM is that they’re dedicated to connect with the community in some really impactful ways – they’ve partnered with food pantries and schools across the area, and they’re also dedicating a portion of their proceeds from one product to a local organization each month through their new initiate, Groceries that Give. I also love that they have a whole category of dairy-free options, one of which was a big hit on the kiddos’ charcuterie board tonight, that makes it super easy to find allergy-friendly snacks and ingredients. We can’t wait for our next order from NECM!

Mom & Dad’s Charcuterie
Full disclosure: we do not mess around when it comes to snacks. Tim has a habit of starting to dig in to any charcuterie board I make while I’m still putting it together, and this time was no different. The Mediterranean Style Artichoke Spread was the first thing I was excited to try, and it was so savory and delicious on the Garlic Herb Crackers. I also couldn’t wait to try the sliced prosciutto and fresh sliced mozzarella, which would be so delicious in a summer Caprese salad! We also loved the Bourbon & Bacon salami and Bellerive Brie, which compliment each other so well, and Tim and the boys all loved the Vermont Smoke & Cure BBQ meat stick.

Kids Charcuterie
Full disclosure: my children also not mess around when it comes to snacks. The thing about our boys is that Jacob eats literally everything that his food allergies allow him to eat, and TJ is the world’s pickiest 3-year-old. Their common ground is usually pretty small when it comes to food, but they both love a snack plate and it’s a surefire way to get them to fill their bellies with a good variety. When it came time to put their charcuterie together tonight, I knew I wanted to include fruit since that’s usually their first pick. Fortunately, our friends at NECM sent the most beautiful pears and delicious green grapes. We also included Hummus, a classic staple around here, and I was beyond thrilled to see that NECM carries vegan tzatziki! It’s one of the things that TJ loves the most and Jacob was never able to try, but now he can! Everything on the kids’ board paired perfectly with Three Pigs Mini Toasts, which TJ kept calling “fancy little breads” and I think that is the perfect name for them.
