Easy Weeknight Comfort Dinner: Sauteed Chicken & Roasted Potatoes

If 2020 has taught us anything, it is to find what bring us comfort and joy; what makes us feel whole; what makes our houses our homes. For me, cooking and making meals has always been an expression of love. It comes from my mom and my Grandma – they always cooked something to fix something that was wrong or celebrate something that was good. Have a cold? Minestrone soup. Have a baby? Enough beef stew and pasta e fagioli in the freezer to feed a small country.

As the cooler weather has made its way into New England, comfort food has made a comeback as well. Heavier sauces for our pasta, warmer seasonings for our vegetables, and chili. All the chili. Some heavier meals can be intimidating since they seem to take forever to roast, simmer, and cook all the way through. This recipe is one of my go-to’s for busy weeknights since the chicken and potatoes can be cooked at the same time, and it takes less than an hour for both!

Sauteed Chicken & Roasted Potatoes

Ingredients
  

  • 1 lb chicken breast
  • 4 tbsp butter
  • 1 cup flour
  • 2 tbsp lemon pepper seasoning
  • 1.5 lb red potatoes
  • 4-5 tbsp olive oil
  • 1/2 tsp crushed red pepper
  • 1 tsp garlic powder
  • 2 tsp salt

Instructions
 

  • Preheat oven to 450 degrees F
  • Quarter you potatoes and add them to a large mixing bowl
  • Pour olive oil over potatoes, season with salt, garlic powder, and crushed red pepper
  • Toss potatoes so they are evenly coated with the olive oil and seasoning
  • Pour the potatoes into a greased 9×13 baking dish
  • Bake for 45 minutes, or until potatoes are golden brown
  • While the potatoes are baking, heat 2 tbsp of butter (or butter alternative) in a sautee pan until melted
  • Add flour to a shallow bowl or baking dish, and coat the chicken breasts in flour while the butter is melted
  • Once the butter is melted, add the chicken and season with lemon pepper seasoning
  • Cook for about 5 minutes, flip the chicken breasts over, season the second side with lemon pepper seasoning, and cook an additional 5 minutes or until chicken is cooked through
