Sauteed Chicken & Roasted Potatoes

Ingredients
  

  • 1 lb chicken breast
  • 4 tbsp butter
  • 1 cup flour
  • 2 tbsp lemon pepper seasoning
  • 1.5 lb red potatoes
  • 4-5 tbsp olive oil
  • 1/2 tsp crushed red pepper
  • 1 tsp garlic powder
  • 2 tsp salt

Method
 

  1. Preheat oven to 450 degrees F
  2. Quarter you potatoes and add them to a large mixing bowl
  3. Pour olive oil over potatoes, season with salt, garlic powder, and crushed red pepper
  4. Toss potatoes so they are evenly coated with the olive oil and seasoning
  5. Pour the potatoes into a greased 9x13 baking dish
  6. Bake for 45 minutes, or until potatoes are golden brown
  7. While the potatoes are baking, heat 2 tbsp of butter (or butter alternative) in a sautee pan until melted
  8. Add flour to a shallow bowl or baking dish, and coat the chicken breasts in flour while the butter is melted
  9. Once the butter is melted, add the chicken and season with lemon pepper seasoning
  10. Cook for about 5 minutes, flip the chicken breasts over, season the second side with lemon pepper seasoning, and cook an additional 5 minutes or until chicken is cooked through
