These easy banana avocado muffins are a great make-ahead breakfast or snack. My boys love them and I’ve been grabbing one in the afternoon for a sweet pick-me-up, too!
Ingredients
- 1 ripe avocado
- 1 ripe banana
- 1/2 cup of milk (we use dairy-free, but any milk will work)
- 2 eggs
- 2 tablespoons maple syrup
- 1 teaspoon baking soda
- 2 cups of flour (whole wheat or all-purpose, we use all-purpose)
- 1/2 cup of chocolate chips (optional, but yummy)
Recipe
- Preheat your oven to 350 degrees F and grease your muffin tin
- Mash avocado and banana with a fork until no lumps remain in a large mixing bowl
- Add milk, eggs, and maple syrup, and mix well
- Add baking soda and flour, and combine
- Fold in chocolate chips
- Fill muffin tin cups about 2/3 of the way full
- Bake for 10-12 minutes for 24 mini muffins or 12-15 minutes for 12 regular size muffins
