Banana Avocado Muffins

These easy banana avocado muffins are a great make-ahead breakfast or snack. My boys love them and I’ve been grabbing one in the afternoon for a sweet pick-me-up, too!

Ingredients

  • 1 ripe avocado
  • 1 ripe banana
  • 1/2 cup of milk (we use dairy-free, but any milk will work)
  • 2 eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon baking soda
  • 2 cups of flour (whole wheat or all-purpose, we use all-purpose)
  • 1/2 cup of chocolate chips (optional, but yummy)

Recipe

  • Preheat your oven to 350 degrees F and grease your muffin tin
  • Mash avocado and banana with a fork until no lumps remain in a large mixing bowl
  • Add milk, eggs, and maple syrup, and mix well
  • Add baking soda and flour, and combine
  • Fold in chocolate chips
  • Fill muffin tin cups about 2/3 of the way full
  • Bake for 10-12 minutes for 24 mini muffins or 12-15 minutes for 12 regular size muffins
