Baked Turkey Meatballs

I have loved finding recipes that my boys love, and sometimes they’re the most unexpected. TJ has never liked turkey in any form – pureed, shredded, meatloafed, deli sliced, nothing. In fact, the only meat he eats is chicken and only in very specific forms – mostly dinosaur shaped. Jacob, with all of his food allergies and restrictions, loves all meat in literally any form. With two boys with vastly different preferences, I’m always looking for things I can make ahead of time and keep on hand. This baked turkey meatball recipe is dairy free with a few modifications and a great snack for Mamas, too!

Baked Turkey Meatballs

Ingredients
  

  • 1 lb ground turkey
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs
  • 2 tbsp milk or milk alternative
  • 1/2 cup grated parmesan leave out to make dairy free
  • 1 tbsp minced parsley
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat oven to 400 degrees F, line a baking sheet with parchment paper, and spray with non-stick cooking spray
  • Mix all ingredients together in a large mixing bowl until completely combined
  • Roll about 20-25 meatballs, each about 1 heaping tablespoon each
  • Bake 25-30 minutes
